MEET THE TEAM: GREGORY ELDIN!
The Euston restaurant, The Savannah reopens May 17th after months of anticipation! So we decided now is the perfect time to introduce you to Gregory Eldin , The Savannah restaurant manager! Originally from Avignon in France Gregory has been living in the big smoke since 1999. With over 25 years in hospitality, Greg initially started his career as a chef then made the jump to the front of the house a few years later.
He has worked at several well-known restaurants in London, from Wagamama, Crazy Bear to Jamie’s Italian. Whilst at Brasserie Joel in Park Plaza Westminster Bridge, he was nominated for the prestigious Catey’s hotel restaurant manager of the year award 2016. Gregory then moved to Bill’s restaurant before arriving at the Euston restaurant, The Savannah.
What is your favourite food?
I’m a food lover in general and that’s why I am working in this industry. If I had to choose it would have to be South-East Asian food, in particular Thai food. The flavours, the spiciness, and the culture of sharing your food with your loved one. Close number two would be Japanese and Vietnamese, very healthy food.
What advice would you give to a young restaurant manager starting his career?
Look after your team and your team will look after you and your restaurant. To sum up what I mean by that is to make sure you spend time with your team, not in the office. You cannot lead a team from your desk. Make sure you spend as much time as possible with them to make sure that they are trained. In the way you want them to work so that they have all the tools needed to make your business successful.
A manager once told me a person who isn’t performing at the required level is not that person’s failing but the manager’s. We should adapt ourselves to the needs of that person to make sure that they understand what’s required of them. I also always make sure that whatever they are required to know or do, I know better or do better so that when it is required I can step in. No point asking your staff to learn something If you don’t bother learning it yourself.
Why is afternoon tea at the Euston restaurant, The Savannah restaurant so popular?
Afternoon tea at The Savannah restaurant is popular because it is very delicious and fresh. Everything served is made in house on the day a few hours before being serving it to our guests. We have an amazing offer at the moment. Consisting of bottomless afternoon tea allowing you to drink prosecco for 2 hours! In addition, we are one of only two restaurants in London offering this promotion at the moment.
What do you like most about managing the Savannah restaurant?
I was attracted to the ethical side of the restaurant, we work so hard to adhere to our sustainability ethos. As well as closely working with suppliers to ensure that their impact on the environment and carbon footprint is minimal. We are also a member of the Sustainable restaurant association. The Euston restaurant is still developing and finding its feet. I am very happy to be apart of the process. I have always found it exciting to be able to change and adapt the menus as required without having any restrictions.
why should guests have their lunch at The Savannah?
The restaurant is away from noisy streets. If you are looking for a place to have business meetings or simply a relaxing lunch with tremendous food. Without being rushed then we are your place. We have a wide variety of beautifully cooked meals as well as quick bites. No matter what you are looking for, you will be able to find it on our menu.
What have you missed the most about the hospitality industry during COVID19?
I have missed human interaction the most. I am a social person and I enjoy the energy of a busy restaurant. This is what most people in the hospitality industry miss the most. Seeing how quiet the streets of London have been is the strangest thing I have ever experienced. I have lived here for 22 years and never thought in a million years that I would live through such an event. I can already see more people in the streets. I can feel that everyone is ready to resume their social life. I cannot wait to re-open our doors and welcome our guests back.
As the Euston restaurant reopens what safety measures have been put in place?
The safety of our guests and staff members is paramount. As a result, we have taken all necessary measures to ensure that everyone is safe. We have plenty of hand sanitisers around the restaurant. We have spaced out our tables to ensure the social distancing guidelines are respected. We have reduced the amount of staff in our kitchen. Our staff members will be wearing facemasks and wash their hands more often. We will use throwaway paper menu and napkins. Our cutleries will be set once our customers are sat down.
